For the second year, The Green Laboratory at the Hotel and Restaurant School invites you to the Upcycling Symposium. This event brings together some of the world's most talented chefs, all of whom work with circular gastronomy, with a focus on great taste and full utilization of raw materials. Look forward to a full day of talks and workshops, where you will gain insight into innovative techniques, sustainable solutions and concrete tools for working with side streams and by-products, and for rethinking how we view and use our raw materials. Your host The Green Laboratory is a development environment at the Hotel and Restaurant School with a focus on sustainable gastronomy.
