In Kirk's lecture, we delve into some of the most important questions about the future of diet in a world characterized by climate change and increasing focus on health. What impact does our choice of raw materials have on both our health and the planet - and how can we make better choices in everyday life? You will gain insight into current trends in food, including plant-based proteins and alternative raw materials such as mushrooms, seaweed and insects.
